White Dog Cafe Brings Fresh Flavor to Chester Springs’ Iconic Old Vickers Tavern
Fearless Restaurants recently opened the latest White Dog Cafe in the old Vickers Tavern, a former stop on the Underground Railroad, in Chester Springs, writes Ed Williams for the Main Line Today.
Philadelphia’s Stokes Architecture + Design has transformed the seven rooms of the new eatery, giving each its own unique identity honoring the original 1820s farmhouse. The space now accommodates up to 400 guests, combining vintage and modern furnishings to create a comfortable tavern ambiance that respects the building’s rich history.
The whimsical flow is accentuated by canine-themed knickknacks and portraits of the town’s dogs by local artists Scott Rowell and Janelle Morrison.
The menu includes many favorites from other White Dog locations, with a focus on seasonal ingredients and creative blends of textures and flavors. Standout dishes include a crispy cauliflower appetizer, Verlasso salmon with a pecan crust and maple-bourbon glaze, and a tender lamb shank.
Chocolate cheesecake is the perfect dessert, offering a rich, decadent flavor without its usual heaviness.
“The neighborhood has embraced us,” said Sydney Grims, director of business development for Fearless Restaurants. “We’re not perfect, but we hope to become a neighborhood staple.”
